The USDA says pork production during December was a new all-time monthly high, at 2.235 billion pounds.
That’s up 1% on the year with three pound gain in the average live weight to 286 pounds cancelling out a slight decline in the monthly slaughter to 10.461 million head.
Beef production was down 1% at 2.148 billion pounds, with the slaughter also down 1% at 2.580 million head and the average live weight two pounds lighter at 1,379 pounds.
December’s total red meat production was 4.402 billion pounds, nearly unchanged from December 2016.
The preliminary estimate of red meat production in 2017 is a record 51.497 billion pounds, up 3% from 2016, with the official totals for last year due out in Apri
